Some of the theories in the perception of sweetness are reviewed. The sweetness of some chlorodeoxy sucrose andgalactosucrose derivatives is examined in relation to conformation and conIJgU1'ation. The presence of more than one 'g1ucophore' system in these derivatives is proposed.
